in true erica fashion, they’re sugar-free, protein-boosted, & loaded with my favorite BTR nation goodies for the ultimate better-for-you dessert. cozy, chocolatey, coconutty perfection — I can’t wait for you to try them!
Ingredients
shortbread crust
- 2 oz2 oz2 oz maple keto granola (click for recipe)
- 222 Cinnamon Cashew Crunch Protein + Superfood Bar - B.T.R. Nation

- 222 Cinnamon Cookie Dough Superfood Bar - B.T.R. Nation

- 2-4 Tbsp2-4 Tbsp2-4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1/2 tsp1/2 tsp1/2 tsp Sea Salt

- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, melted
- 2 Tbsp2 Tbsp2 Tbsp Water
“sweetened” condensed coconut milk
- 15 oz15 oz15 oz Coconut Milk
- 1/4 cup1/4 cup1/4 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1/4 cup1/4 cup1/4 cup Powdered Monkfruit Sweetener - Lakanto

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1/2 tsp1/2 tsp1/2 tsp Sea Salt

- 1 cup1 cup1 cup Vanilla Collagen Peptides Powder - Further Food, add in after cooling

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
shortbread crust
- preheat oven to 350.
- in a food processor, add maple keto granola (or sub granola or coconut flakes), BTR bars, monk fruit, & salt; blitz into powder.
- add melted coconut oil + water to crust & mix well.
- line a baking dish with parchment paper, then press down crust.
- bake for ~10-12 minutes; okay to let sit while preparing remaining ingredients.
“sweetened” condensed coconut milk
- to a sauce pan, add all ingredients except collagen & mix well.
- simmer for ~30-40 minutes, or until starts to thicken; stir frequently.
- remove from heat & allow to cool completely.
- slowly mix in collagen peptides to avoid any clumping.
assembling your bars
- to your crust, top with crushed BTR bars, chocolate chips, coconut flakes, & coconut cashew cups.
- pour homemade “sweetened” condensed coconut milk over top of bars, then bake for 25-30 minutes.
- allow bars to completely cool, then place in the fridge for at least 1-2 hours to set.
- cut bars into squares & enjoy!
