  1. In a medium mixing bowl, stir together almond flour, protein powder, matcha, blue spirulina if using, and salt.
  2. Add in cashew butter, maple syrup, vanilla extract, and peppermint extract and stir until well combined, using your hands to mix if needed.
  3. Add in chocolate chips and cacao nibs and combine well.
  4. Roll into balls. Enjoy right away or place in the fridge for 1 hour to firm up.
