I have loved a strawberry matcha latte, so I thought why not try it in waffle form? It all comes together so easily with the Bob’s Gluten Free Red Mill Pancake & Waffle Mix!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your waffle maker. In a large bowl, combine the ingredients to make your waffle batter.
  2. Start with ¾ cup of your milk, and add more later if needed to get your desired thinness. Allow the batter to rest for ten minutes before cooking.
  3. While the batter rests, make a quick strawberry topping by cooking down sliced strawberries, sugar, lemon zest and juice, and a pinch of kosher salt over medium heat for ten minutes, stirring frequently and lowering the heat as needed.
  4. Remove from the heat and allow to cool a bit, which will also allow the natural syrup to slightly thicken.
  5. Cook your waffles according to your waffle makers instructions, and keep warm until ready to serve with the strawberry topping.
  6. Feel free to add whipped cream if desired!
