Mediterranean Pasta Salad
Mediterranean pasta salad is a simple side dish that’s a guaranteed hit at every gathering. - 5 oz5 oz5 oz Fusilli Pasta, can sub gluten-free
- 1 cup1 cup1 cup Cucumber, chopped
- 1 cup1 cup1 cup Cherry Tomato, halved
- .5 cup.5 cup.5 cup Black Olives, sliced
- .5 cup.5 cup.5 cup Bell Pepper, chopped
- .25 cup.25 cup.25 cup Red Onion, finely chopped
- .25 cup.25 cup.25 cup Sun Dried Tomatoes, finely chopped
- .25 cup.25 cup.25 cup Feta Cheese, can sub vegan
Dressing
- 2 Tbsp2 Tbsp2 Tbsp Italian Dressing
- 1 Tbsp1 Tbsp1 Tbsp Mayonnaise, can sub vegan
- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 pinch1 pinch1 pinch Sea Salt, to taste
- 1 pinch1 pinch1 pinch Black Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook pasta al dente according to package instructions. Rinse under cold water.
- Combine the pasta and all the salad ingredients in a large bowl and toss together.
- Combine the dressing ingredients in a jar or shaker cup and shake until well mixed.
- Add the dressing to the salad and chill in the refrigerator for at least 2 hours. Enjoy!
- Store any leftover salad in an airtight container in the fridge for up to 4 days.
