Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, mix together your melted coconut oil, pure maple syrup, and vanilla extract.
- Pour in your almond flour, oat flour, cornstarch, salt, and baking powder.
- Mix until a dough forms.
- Lay your dough on a silicone baking mat and roll out with a rolling pin until 1/4-inch thick. Using a glass, press down on the dough and carve out uniform circles. Place them on your parchment lined baking sheet and continue the process of rolling out your dough and cutting out circles until all the dough is used up.
- Bake for 10-15 minutes or until your cookies are slightly golden. Set aside to cool.
- Once cooled, use a spoon to pour melted white chocolate over your cookies in an uneven puddle shape, setting aside about 2 tbsp if you want to create a pink scarf.
- Add a large marshmallow to the back of the cookie on top of the white chocolate.
- Add chocolate gems for buttons on the cookie, and with a toothpick dipped in melted chocolate chips, add arms to the cookie and a face (eyes and mouth) to the marshmallow. Top off with an orange sprinkle nose dipped in white chocolate to stick to the face.
- If you want to add a scarf, mix some dye-free pink food color to some white chocolate and draw on a scarf with a toothpick. Enjoy!
