Tortilla Soup
Ingredients
- 1 lb1 lb1 lb Boneless Skinless Chicken Thigh, or chicken breasts, and/or beans
- 2/3 cup2/3 cup2/3 cup Diced Tomatoes, (see notes)
- 2/3 cup2/3 cup2/3 cup Onion, diced (see notes)
- 2/3 cup2/3 cup2/3 cup Bell Pepper, or jalapeños, diced (see notes)
- 1-2 cups1-2 cups1-2 cups free range Chicken Broth
- 8.5 oz8.5 oz8.5 oz Latin Inspired Flavor Starter Sauce, (1 bottle)
- Salt, to taste/health needs
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sear chicken if desired. Add ingredients to the slow cooker, stir to combine.
- Cover and cook on low for 6-8 hours.
- Serve as a stew, or over mashed potatoes, rice, couscous, quinoa, pasta, or wrapped in warm tortillas.
Notes
Feel free to replace with any veggies you have on hand or prefer, or use any ratio of the vegetables listed. // Works great as a sauce for your Instant Pot recipes, as well! Adjust recipes for your electric pressure cooker according to the instructions.
