monte cristo sandwich on cauliflower buns (Edit recipe)

let's make a healthier, nutrient packed version of an indulgent sandwich - the monte cristo! while I love to make cauliflower buns, you could really use any bread. I then make a fiber rich jam & pack on the protein. truly a sandwich I make once a week! hope you can try out this delicious & nutritious sandwich!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. first make jam, by adding all ingredients to a small sauce pan & cook on low heat for 6-8 minutes.
  2. cool completely to allow jam to thicken.
  3. jam makes ~4 servings or 1/2 cup total.
  4. then make "honey" mustard by combining all the ingredients together - refrigerate until ready to serve - makes ~4 servings or 1/2 cup total.
  5. to build sandwich, start by adding a bit of “honey” mustard to each cauliflower bun.
  6. then layer on a bun - cottage cheese, cheese, jam, ham, jam, cheese, cottage cheese, other bun.
  7. pan fry, microwave, or bake sandwich until cheese is melted.
  8. serve with extra “honey” mustard for dipping.
