Mushroom Tikka Skewers
These smoky, Indian-spiced mushrooms are unreal. There is a restaurant in Mumbai that we always have to visit when we go back that serves the most mouthwatering Paneer Tikka, and the flavor from these mushrooms reminds me so much of that dish. They will seriously be some of the best mushrooms you've ever had. Something about that marinade and grill just transforms their flavor and really brings them to life. And they're perfect for meal prep because they taste even better as leftovers!
Ingredients
- 1 lb1 lb1 lb Baby Bella Mushrooms
- 3-4 cloves3-4 cloves3-4 cloves Garlic, large, peeled
- 1/41/41/4 Onion, roughly chopped (about 1/2 cup)
- 111 Lime, juiced
- 1/2 tsp1/2 tsp1/2 tsp Black Pepper
- 1/2 tsp1/2 tsp1/2 tsp Salt
- 1/4 tsp1/4 tsp1/4 tsp ground Ginger
- 1/2 tsp1/2 tsp1/2 tsp Turmeric Powder
- 1/2 tsp1/2 tsp1/2 tsp ground Coriander
- 1/4 tsp1/4 tsp1/4 tsp Ground Cumin, ground
- pinch pinch pinch Ground Cinnamon
- pinch pinch pinch Cardamom Seed, ground
- 1/2 cup1/2 cup1/2 cup Plain Yogurt, (use dairy-free if necessary for Whole30 or vegan!)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all marinade ingredients in a blender and blend until smooth. You can even do this a day in advance--the longer the flavors get to know each other, the better.
- Clean the mushrooms with a damp paper towel to remove any dirt, then remove any long steps, then slice each mushroom in half from top to bottom.
- Stir mushrooms into the marinade and marinate for 15-30 minutes.
- Preheat grill or oven to 425˚F.
- Carefully skewer mushrooms. They can be touching on the skewers but be sure not to crowd them.
- Brush both sides of mushrooms with marinade.
- Place skewers onto grill or parchment-lined baking sheet, if roasting in the oven instead.
- Grill for 20 minutes on hottest part of the grill, then flip and grill on the other side for 10 minutes.
- If roasting in the oven, cook for 40 minutes or until mushrooms are browned.
- Remove from skewers and top with a squeeze of lime and cilantro to serve, if desired!
Notes
These make excellent leftovers because they taste even better the next day! I recommend reheating on a stovetop, in the oven until warmed through, or in the air fryer for optimal texture and flavor.
