No-Bake Samoa Cookie Bark (gluten-free/high protein)
This healthy, no-bake Samoa Cookie Bark is a fun take on the traditional cookie. Made without any gluten or refined sugar, this bark is also sneakily high in protein!
Ingredients
- 1 cup1 cup1 cup Almond Flour
- 0.25 cup0.25 cup0.25 cup Vanilla Collagen Peptides Powder - Further Food
- 3 Tbsp3 Tbsp3 Tbsp Maple Flavored Syrup - Lakanto
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, melted
- 1 cup1 cup1 cup Coconut, shredded, unsweet, toasted
- 0.5 cup0.5 cup0.5 cup Almond Butter
- 2 Tbsp2 Tbsp2 Tbsp Maple Flavored Syrup - Lakanto
- 0.5 cup0.5 cup0.5 cup Milk Chocolate Chips (No Sugar Added) - Lakanto
- 1 tsp1 tsp1 tsp Coconut Oil, melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, mix almond flour, collagen, coconut oil and maple syrup until a dough forms.
- Press dough into a thin rectangle on a lined baking sheet.
- Combine almond butter, coconut, and maple syrup.
- Press coconut layer over top of cookie layer.
- Melt together chocolate and coconut oil, then spread over top of coconut layer.
- Chill until chocolate is firm, then cut or break into pieces!
Notes
Toast coconut by adding it to a large pan over medium heat and stirring until it starts to turn brown.
