Oatmeal Coconut Breakfast Cookies (Edit recipe)

These oatmeal coconut chocolate chip beauties were supposed to be no bake bars, but wound up being THE BEST breakfast cookies instead. With wholesome ingredients you probably have at home, you will not want to skip over these and you also will want one every day 😋 I’m calling them breakfast cookies because they don’t have a cookie dough texture and the base is mostly oats. Plus, with these clean ingredients they are a fun breakfast companion 🥰

  1. Mix everything in a bowl and fold in chocolate chips.
  2. Scoop onto a parchment lined baking sheet and form into cookie shapes with your hands and flatten (these won’t spread).
