Oatmeal Cookie Dough Truffles
These Oatmeal Cookie Dough Truffles are easy to make and even easier to eat!
Ingredients
- 1/2 cup1/2 cup1/2 cup Cashew Butter
- 1/2 cup1/2 cup1/2 cup Coconut Sugar
- 2 Tbsp2 Tbsp2 Tbsp Almond Milk, or non dairy milk of choice
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- 1/2 tsp1/2 tsp1/2 tsp Salt
- 1/4 cup1/4 cup1/4 cup Oats, Rolled
- 3/4 cup3/4 cup3/4 cup Oat Flour, (or 1/4 cup coconut flour)
- 1/4 cup1/4 cup1/4 cup Semi-Sweet Chocolate Chips, we used our 72% chips
- 1/2 cup1/2 cup1/2 cup Dark Chocolate Chips, melted

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix together cashew butter, coconut sugar, milk, vanilla, salt, and cinnamon in a medium-sized bowl with a rubber spatula or wooden spoon (the mixture is slightly thick).
- Add oats, oat flour, and chopped chocolate. Continue mixing until completely uniform (the dough will be very thick).
- Scoop and roll into 10-12 balls.
- Freeze for 10 minutes. While freezing, prepare melted chocolate in a small bowl.
- Dip truffles into melted dark chocolate, shake off excess and let set up on a parchment-lined cookie sheet.
- Let firm up at room temperature or in the fridge. Enjoy!
