Onion Fig Jam
Onion fig jam is a fun, flavorful condiment that goes well with so many things. This recipe is Paleo and gluten-free.
Ingredients
- 1 whole1 whole1 whole Red Onion, large, thinly sliced
- .5 cup.5 cup.5 cup Cabernet Sauvignon Red wine, or your favorite dry red wine
- .5 tsp.5 tsp.5 tsp Sea Salt
- 2 Tbsp2 Tbsp2 Tbsp Honey, light-colored (dark, like a wildflower, will overpower the other flavors)
- .75 cup.75 cup.75 cup Dried Figs, small-medium dice
- 2 Tbsp2 Tbsp2 Tbsp Red Wine Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Thyme, fresh
- 2 tsp2 tsp2 tsp Avocado Oil

- In a large saucepan on medium heat, add the avocado oil. Once the pan is hot, add the onions and sea salt. Cook for about 3-5 minutes, stirring occasionally to keep the onions from burning.
- Add the diced figs, thyme, and red wine. Reduce the heat to low and cook until the red wine is almost completely absorbed.
- Add the honey and vinegar and mix thoroughly. Continue cooking for about 10-15 minutes. A jam-like consistency should remain when it is done.
- Store in an airtight container in the refrigerator.
