Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a bowl, toss the chicken in arrowroot starch, salt, & pepper.
  2. in a separate bowl, whisk together all sauce ingredients & set aside.
  3. heat a large skillet with a little avocado oil, then add chicken & cook until done (may need to work in batches).
  4. pour sauce & cashews on top of chicken & simmer for 8-10 minutes or until sauce thickens (if sauce is too thick, add a little water to thin).
  5. in a separate skillet, saute stir-fry veggies & cauliflower rice.
  6. add cauliflower rice & veggies to a bowl, then spoon cashew chicken mixture overtop the veggies.
  7. garnish with any additional toppings you like (my favorites are more cashews, cucumbers, seaweed, & cilantro) & enjoy!
