orange chicken + cashew chicken = orange cashew chicken (mind = blown)
Ingredients
chicken & sauce
- 1.5 lb1.5 lb1.5 lb Chicken Thighs, Boneless Skinless, cut into 1" cubes

- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Flour
- 1 tsp1 tsp1 tsp Salt and Pepper
- Avocado Oil
- 0.5 cup0.5 cup0.5 cup Coconut Aminos
- 3 Tbsp3 Tbsp3 Tbsp Tomato Paste

- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 1 whole1 whole1 whole Navel Orange, juiced
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar, or rice wine vinegar
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Red Pepper Flakes, optional

- 0.5 cup0.5 cup0.5 cup Cashews, Raw, lightly chopped

- Water, to thin sauce
for the bowl
- cilantro-lime cauliflower rice (click for recipe)
- sautéed frozen vegetables (click for recipe), I used frozen stir-fry vegetables
- Cashews, Raw

- English Cucumber
- Nori Seaweed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, toss the chicken in arrowroot starch, salt, & pepper.
- in a separate bowl, whisk together all sauce ingredients & set aside.
- heat a large skillet with a little avocado oil, then add chicken & cook until done (may need to work in batches).
- pour sauce & cashews on top of chicken & simmer for 8-10 minutes or until sauce thickens (if sauce is too thick, add a little water to thin).
- in a separate skillet, sauté stir-fry veggies & make cilantro-lime cauliflower rice.
- add cauliflower rice & veggies to a bowl, then spoon cashew chicken mixture overtop the veggies.
- garnish with any additional toppings you like (my favorites are more cashews, cucumbers, seaweed, & cilantro) & enjoy!
