Sometimes I have to trick my husband into eating vegetables. He thinks he doesn't like any of them, so I hide them in different dishes or swap out potatoes and replace them with parsnips. Enter parsnip French fries. When these are dipped in your favorite sauce, you can't even tell they are parsnips. I love the flavor of parsnips so I eat these without any dipping sauce, and if you know me, I am a sauce person so that says a lot. Give these a try if you have a picky eater you need to get more veggies into.

  4. Spread the fries in a single layer on the sheet pan and place them in the oven. Bake for 25-30 minutes. The fries should be golden brown and cooked through with a crispy outer layer.
