This Matcha Peach Bellini Float is a creamy summer treat made with earthy matcha, vanilla ice cream, and bubbly, non-alcoholic Lakanto Peach Bellini Soda. The sweet peach flavor pairs perfectly with rich vanilla and vibrant matcha for a refreshing summer float.

Process

  1. Place your serving glass in the freezer for 5–10 minutes to chill while you prepare the matcha.
  2. In a small bowl, whisk together the matcha powder and hot water until smooth and frothy. Let cool.
  3. Pour a small amount of peach bellini soda into the bottom of the chilled glass.
  4. Add a generous scoop of vanilla ice cream. Slowly pour some of the prepared matcha over the ice cream.
  5. Add more soda and top with another scoop of vanilla ice cream, then slowly pour in more peach bellini soda until the glass is full and bubbly.
  6. Garnish with a fresh mint sprig if desired and serve immediately.
