Peanut Butter Cup Granola
If you know me, you know that there are two things I love most in this world: peanut butter and chocolate. This crunchy granola is so easy to make and one of the best ways to combine peanut butter with chocolate! Not to mention a great excuse to eat chocolate for breakfast.
Ingredients
Wet
- 0.25 cup0.25 cup0.25 cup Crunchy Peanut Butter
- 2 Tbsp2 Tbsp2 Tbsp Vegan Buttery Spread
- 0.25 cup0.25 cup0.25 cup Maple Syrup, Pure
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
Dry
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 1.5 cup1.5 cup1.5 cup Oats, Rolled
- 0.125 tsp0.125 tsp0.125 tsp Baking Soda

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the wet ingredients to a medium sized microwave safe bowl.
- Melt them for 1 minutes in the microwave then stir to evenly combine into a liquid mixture.
- Stir in all of the dry ingredients.
- Press the oat mixture into a flat layer on a parchment lined baking sheet.
- Bake at 325 Degrees F for 25 minutes, stirring halfway through.
- Top with chocolate chips, and let chocolate melt while the granola cools.
- After minimum 30 minutes of cooling, break granola into chunks and then enjoy.
