these peanut butter pretzel protein cheesecake bites are your sweet & salty dreams come true. using fit joy's peanut butter pretzel nuggets + BTR nation's peanut butter crunch bars for the most delicious crust. a creamy peanut butter protein cheesecake filling. all topped with more of that crunchy crust crumble + a peanut butter collagen-boosted drizzle.

oh — & the best part? you can keep it all peanut butter or sneak in a little chocolate peanut butter depending on the pretzels or protein you use.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 325.
  2. in a food processor, add pb pretzels, BTR bars, & monk fruit.
  3. blitz a few times into a crumble, then take out ~3/4 cup mixture for topping the cheesecake bites.
  4. blitz the remaining mixture in the food processor into a powder.
  5. add peanut butter & water to crust & mix well.
  6. add 1 small cookie scoop of crust mixture to the bottom of a muffin tin.
  7. bake crust for ~10 minutes.
  8. clean out blender, then add all protein cheesecake ingredients & blend well.
  9. pour 1 large cookie scoop of cheesecake mixture on top of each crust, then sprinkle on leftover crumble from above.
  10. bake for 25-30 minutes or until set.
  11. allow to cool completely.
  12. peanut butter collagen drizzle: microwave peanut butter → mix in vanilla or chocolate collagen peptides, & water until reaches a nice fudgy consistency → transfer to a small zip lock bag → drizzle on top of each bite.
  13. refrigerate to allow to complete cool; I store them in the freezer & microwave for 10-15 seconds to thaw.
