Pumpkin spice everything season is officially here and these pecan crumble pumpkin spice blondies will be you baking on repeat all season!
They are soft, gooey, and loaded with all the pumpkin spice you could want, plus you get a boost of protein. They are Gluten and Dairy free too!

  1. Preheat the oven to 350°F (175°C) and line an 8x8" baking pan with parchment paper.
  2. In a large bowl, mix together pumpkin purée, almond butter, collagen, maple syrup, egg, vanilla, pumpkin spice, salt, and baking soda until smooth.
  3. Fold in chopped pecans.
  4. Spread batter evenly into the prepared pan.
  5. In a small bowl, combine pecans, almond flour, sugar, oil, and cinnamon until crumbly.
  6. Sprinkle over the blondie batter.
  7. Bake for 20–25 minutes, until the center is set and the edges are golden.
  8. Cool completely before slicing into gooey, cozy blondie squares.
