- Preheat the oven to 350°F (175°C) and line an 8x8" baking pan with parchment paper.
- In a large bowl, mix together pumpkin purée, almond butter, collagen, maple syrup, egg, vanilla, pumpkin spice, salt, and baking soda until smooth.
- Fold in chopped pecans.
- Spread batter evenly into the prepared pan.
- In a small bowl, combine pecans, almond flour, sugar, oil, and cinnamon until crumbly.
- Sprinkle over the blondie batter.
- Bake for 20–25 minutes, until the center is set and the edges are golden.
- Cool completely before slicing into gooey, cozy blondie squares.
