  1. Get out a high power blender.
  2. Add all ingredients to the blender.
  3. Blend until smooth - about 30 seconds. Do not overblend.
  4. Heat a skillet to medium heat and grease with dairy-free butter.
  5. Pour 1/4 cup of pancake batter into a circle on your heated skillet.
  6. Cook first side for 3-4 minutes, until small bubbles form all over the surface. Flip and cook an additional 2 minutes.
  7. Pile pancakes high on a plate, add toppings of choice, and enjoy!
