Perfect Blender Pancakes
There is nothing better than waking up on a Sunday morning after sleeping in, fresh brewed coffee in hand, and pancakes cooking on the stove!

- 0.666 cup0.666 cup0.666 cup Almond Milk
- 1 Tbsp1 Tbsp1 Tbsp Creamy Peanut Butter, melted

- 1 tsp1 tsp1 tsp Lemon Juice
- 1 tsp1 tsp1 tsp Baking Powder

- 0.25 tsp0.25 tsp0.25 tsp Baking Soda
- 1.25 cup1.25 cup1.25 cup All Purpose Flour

- Get out a high power blender.
- Add all ingredients to the blender.
- Blend until smooth - about 30 seconds. Do not overblend.
- Heat a skillet to medium heat and grease with dairy-free butter.
- Pour 1/4 cup of pancake batter into a circle on your heated skillet.
- Cook first side for 3-4 minutes, until small bubbles form all over the surface. Flip and cook an additional 2 minutes.
- Pile pancakes high on a plate, add toppings of choice, and enjoy!
