plaza steak soup
plaza soup has long been a staple soup recipe my family makes every year, however, the classic version relies on flour & a few questionable ingredients I’ve always wanted to upgrade!
after digging a little deeper, I learned this soup actually originated quite close to home for me in kansas city! it was originally served at the plaza III steakhouse on the KC plaza (now closed)… so of course, I had to recreate it erica-style!
this is my better-for-you take: tender beef stew meat, arrowroot starch instead of flour, loads of veggies, & a deeply savory, flavor-forward broth built with tamari, miso, balsamic, & steak seasoning. it’s rich, hearty, cozy, and still very much gives steakhouse soup energy — just cleaner & more nourishing.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted

- 111 Onion, finely chopped
- 2.5 - 3 lb2.5 - 3 lb2.5 - 3 lb Stew Beef - US Wellness Meats

- 1 tsp1 tsp1 tsp Salt and Pepper
- 0.25 cup0.25 cup0.25 cup Arrowroot Flour
- 4 cups4 cups4 cups Beef Broth

- 32 oz32 oz32 oz Frozen Vegetables, I used a blend of carrots, green beans, corn, & peas
- 10 oz10 oz10 oz Diced Tomatoes
- 1 cup1 cup1 cup Freeze-Dried Cherry Tomatoes - CITREVE, rehydrated in water OR sub more diced tomatoes

- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar

- 1 Tbsp1 Tbsp1 Tbsp Barrel Aged Tamari Soy Sauce - Jozo

- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 1 Tbsp1 Tbsp1 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Steak Seasoning - Primal Palate, + more for serving

- Beef Tallow Potato Chips, Classic - Vandy, I used the herbs de provence flavor

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a stock pot, add butter & melt, then sauté onion for 6-8 minutes.
- in a bowl, mix beef stew meat with salt, pepper, & arrowroot starch.
- add stew meat to stock pot & brown on all sides (okay if you don’t get it all perfectly browned).
- add in remaining soup ingredients, then simmer on low for 3-4 hours.
- serve with your favorite sides - I went for vandy’s herbs de provence beef tallow potato chips!
