plaza soup has long been a staple soup recipe my family makes every year, however, the classic version relies on flour & a few questionable ingredients I’ve always wanted to upgrade!

after digging a little deeper, I learned this soup actually originated quite close to home for me in kansas city! it was originally served at the plaza III steakhouse on the KC plaza (now closed)… so of course, I had to recreate it erica-style!

this is my better-for-you take: tender beef stew meat, arrowroot starch instead of flour, loads of veggies, & a deeply savory, flavor-forward broth built with tamari, miso, balsamic, & steak seasoning. it’s rich, hearty, cozy, and still very much gives steakhouse soup energy — just cleaner & more nourishing.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a stock pot, add butter & melt, then sauté onion for 6-8 minutes.
  2. in a bowl, mix beef stew meat with salt, pepper, & arrowroot starch.
  3. add stew meat to stock pot & brown on all sides (okay if you don’t get it all perfectly browned).
  4. add in remaining soup ingredients, then simmer on low for 3-4 hours.
  5. serve with your favorite sides - I went for vandy’s herbs de provence beef tallow potato chips!
