Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- On the stove, preheat a large pot with water.
- While the water is preheating, rinse and drain the pork skins a few times.
- Once the pot of water is in a rolling boil, add in 1 Tbsp sea salt. Stir until the sea salt dissolves, add the pork skins, and cook for 20 minutes.
- Remove excess fat from the skin with a knife. Save the fat for rendering lard.
- Slice the pork skin to desired size and add it into a large bowl.
- Add 2 Tbsp distilled vinegar and 1 Tbsp sea salt, and mix well.
- Dehydrate at 150F using a dehydrator. If using the oven, dehydrate at the lowest temperature with the oven door slightly open.
- When it's completely dry, air fry or deep fry. If using the air fryer, set the temperature to 375F for 5 minutes. If deep frying, use avocado oil. Deep fry until the pork rind puffs up and is golden yellow.
- Stir and air fry an extra 1-2 minutes for even cooking.
- Season as you wish.
- You can refrigerate extra pork rind chips for later use.
Notes
*If you can find French’s or President’s Choice sugar-free ketchup, it is best. These are the only two brands that I know of that are low carb and keto friendly with stevia as the sweetener. Other brands uses sucralose.”
