protein pancake quesadilla
we love the breakfast foods: pancakes, eggs, jam, cheese, meat, etc. so why not put it all into one giant stack & make a quesadilla out of it! this little guy is full of every flavor imaginable & is seriously so darn tasty!
Ingredients
- 0.25 cup0.25 cup0.25 cup Bell Pepper and Onion Blend, Frozen
- 1 oz1 oz1 oz smoked beef heart (click for recipe), or deli ham, diced
- 222 Egg
- 1 pinch1 pinch1 pinch Cowboy Salt - Texas Salt Co.
- 1 pinch1 pinch1 pinch Black Pepper
- 222 greek yogurt protein pancakes (click for recipe)
- Raspberry Superfood Jam - Smash Foods, or any flavor you like
- Gouda Cheese, slice of any cheese

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- to a small skillet, saute peppers, onions, & meat.
- in a bowl, whisk together eggs, salt, & pepper.
- pour eggs into skillet with veggies & meat, then scramble.
- spread chia smash jam onto each pancake, then add scrambled egg mixture, slice of cheese, & other pancake half.
- place pancake quesadilla into skillet & cook for 2-3 minutes on each side or until pancake is crisp & cheese is melted.
- option to serve with maple syrup on top or to dip in!
