Roasted Cauliflower with Brown Butter & Pepitas
This easy vegetable side dish has a nutty and slightly tangy flavor. The cauliflower is roasted in the oven, and when it's finished, you drizzle it with a brown butter and lemon mixture. It's then topped with pepitas for an added crunch and cilantro for flavor.
Ingredients

- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 0.25 cup0.25 cup0.25 cup Salted Butter
- 2 tsp2 tsp2 tsp Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Raw Pepitas
- 2 Tbsp2 Tbsp2 Tbsp Cilantro, roughly chopped
- 1 tsp1 tsp1 tsp Sea Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400 degrees and line a sheet pan with parchment paper.
- In a medium bowl, toss the cauliflower with avocado oil, sea salt, and pepper.
- Spread the cauliflower in a single layer on the sheet pan, place it in the oven, and roast for 40-45 minutes.
- While the cauliflower roasts, add the butter to a sauté pan on med-low heat. Melt the butter, occasionally swirling, until the milk solids turn brown and a nutty aroma arises.
- Add in the lemon juice and pepitas. The mixture will crackle and pop, remove it from the heat.
- When the cauliflower is done roasting, drizzle the butter/pepita mixture over the top and sprinkle the cilantro.
