Simple Fresh Spring Mix Greens Salad

Ingredients
- 1 cup1 cup1 cup Blueberries
- 3 cups3 cups3 cups Lettuce, Spring Mix Salad Greens
- .5 whole.5 whole.5 whole Avocado, diced
- 1 whole1 whole1 whole Radish, large watermelon radish, thinly sliced
- 7 whole7 whole7 whole Asparagus, stalks, large, chopped
- 3 Tbsp3 Tbsp3 Tbsp Olive Oil
- .5 whole.5 whole.5 whole Lemon, whole
- 1 tsp1 tsp1 tsp Black Peppercorns, Ground Fresh
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, add in 3 large cups of spring mix greens. Then, add in cubed avocado.
- Thinly slice a radish and rinse one cup of blueberries, then add to the salad mix.
- Last, chop asparagus and add to the salad.
- In a measuring cup, combine 3 tbsp olive oil, juice of 1/2 a fresh lemon, and a few cracks of fresh cracked pepper. Whisk to combine then drizzle onto the salad, tossing with tongs to combine.
