Simple Gluten Free Sourdough Bread

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl, whisk all dry ingredients thoroughly.
- Add sourdough starter, water, oil, and honey.
- Mix until a thick, sticky dough forms (like thick batter).
- GF sourdough dough should be scoopable, not kneadable.
- First Rise (Bulk Fermentation): Cover bowl and let rise at room temperature 8–12 hours (overnight).
- It should puff slightly and smell pleasantly tangy.
- Line a bowl with parchment or a floured tea towel.
- Scoop dough into bowl and smooth the top with wet hands.
- Second Rise: Cover and rise 2–4 hours, until slightly domed and airy.
- Preheat oven to 450°F (230°C) with a Dutch oven inside.
- Transfer dough (with parchment) into hot Dutch oven.
- Score the top lightly.
- Bake 30 minutes covered
- Remove lid, bake 15–20 minutes uncovered
- Bread should be golden
- Let Cool Completely- around 2-4 hrs. The longer it has to cool the less doughy and more crumb it will have when you cut into the loaf
- This is important — let cool at least 2 hours before slicing to set structure.
