Simple Lemon Herb Roasted Chicken
An easy to make roasted chicken dinner with lemon and herbs. Purchasing or spatchcocking the chicken it will save time in the roasting process.
Ingredients
- 111 Chicken, Whole, or 4-6 pieces of chicken thighs, legs, etc.

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Herbs, dried, see notes for the blend
- 111 Lemon

- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Butter, Salted

- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat the oven to 375°F and line a baking sheet with parchment paper for easy cleanup.
- Spatchcock the chicken then place it onto a roasting pan. Or if using chicken pieces, place onto a roasting pan.
- Sprinkle the chicken liberally with the herbs, making sure you get all sides of the chicken.
- Drizzle olive oil over the top of the chicken.
- Cut lemon in half and squeeze the juice of HALF of the lemon over the top of the chicken. Take the other half of lemon slice it and place it under the chicken.
- Roast for 30-45 minutes, basting halfway through, until the chicken reaches 165°F and the juices run clear.
- Remove from the chicken from oven and add the butter to the roasting pan, stirring it around in the juices so it melts.
- Pour juices into a serving bowl and cut chicken if needed and place on a serving tray.
- Serve chicken with the reserved juices, and cooked lemon slices if desired.
Notes
You can use your favorite dried herbs or use the blend below. Herb Blend 1 Tbsp dried parsley 1 Tbsp dried thyme 1 Tbsp Sea Salt Flakes (such as Maldon Sea Salt) 1 Tsp dried rosemary 1/4 tsp ground black pepper Mix together and store in a jar. Makes approx. 1/8 cup.
