High Protein Blueberry Orange Crisp
This crumble hits the spot on lazy weekend mornings when you have extra time to prepare something special.
You can even prepare it the night before and heat it for a quick and easy breakfast during the week. Just add the yogurt when you’re ready to eat.
Ingredients
- 1.5 cups1.5 cups1.5 cups Blueberries
- 0.5 tsp0.5 tsp0.5 tsp Orange Zest
- 1 Tbsp1 Tbsp1 Tbsp Orange Juice
- 1 tsp1 tsp1 tsp Pure Maple Syrup
- .25 cup.25 cup.25 cup Oats, Rolled
- 26 grams26 grams26 grams Vanilla Protein Powder
- 2 Tbsp2 Tbsp2 Tbsp Almonds, Sliced
- 1 Tbsp1 Tbsp1 Tbsp Coconut, Shredded
- 1 tsp1 tsp1 tsp Vanilla Extract
- 1 tsp1 tsp1 tsp Pure Maple Syrup
- 1 Tbsp1 Tbsp1 Tbsp Vegan Buttery Spread
- .5 cup.5 cup.5 cup Plain Greek Yogurt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F
- Place blueberries into a small oven-safe baking dish
- Add orange zest, orange juice, and one teaspoon of maple syrup. Mix until thoughtfully combined and set aside.
- In a small bowl mix together oats, protein powder, almonds, coconut, vanilla, 1 teaspoon maple syrup, and butter.
- Spread the mixture over the prepared blueberries and bake for 22 to 26 minutes, or until the top is golden brown.
- Top with two scoops of Greek yogurt. I also added a little drizzle of honey, extra zest, and coconut to mine (it's so good!).
