A healthier take on a classic sticky date loaf. Made with Greek yoghurt, naturally sweet dates and a touch of maple syrup, it's soft, satisfying and perfect for snacks, lunchboxes or a quick grab-and-go breakfast. A simple bake that delivers plenty of flavour without needing loads of butter or refined sugar. 🍞✨

Sticky Date Loaf

  • 500 grams Pitted Dates, Chopped and soaked in boiling water for 10 mins
  • 4 whole Eggs
  • 1 cup Greek Yoghurt
  • 0.5 cup Maple Syrup, Can substitute honey
  • 2 tsp Vanilla extract
  • 3 cups Self-raising flour
  • 1 tsp Cinnamon
  • 1 pinch Salt

Sticky Date Syrup

  • 0.3 cup Maple Syrup
  • 2 Tbsp Honey
  • 3 Tbsp Boiling Water

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 180°C. Line a large loaf tin (or two standard loaf tins).
  2. Place dates in a bowl, pour over boiling water. Leave for 10 minutes.
  3. Mash the date mixture slightly with a fork.
  4. Whisk eggs, yoghurt, maple syrup, and vanilla together.
  5. Add the date mixture and stir to combine.
  6. Fold in flour, cinnamon, and salt until just combined.
  7. Pour into prepared tin and bake for 45-55 mins.
  8. Mix glaze ingredients together, poke holes with a skewer all over the loaf and brush syrup generously over the hot loaf as soon as it comes out of the oven.
  9. Allow to cool before slicing.
