Ingredients
Sticky Date Loaf
- 500 grams500 grams500 grams Pitted Dates, Chopped and soaked in boiling water for 10 mins
- 4 whole4 whole4 whole Eggs
- 1 cup1 cup1 cup Greek Yoghurt
- 0.5 cup0.5 cup0.5 cup Maple Syrup, Can substitute honey
- 2 tsp2 tsp2 tsp Vanilla extract
- 3 cups3 cups3 cups Self-raising flour
- 1 tsp1 tsp1 tsp Cinnamon
- 1 pinch1 pinch1 pinch Salt
Sticky Date Syrup
- 0.3 cup0.3 cup0.3 cup Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Honey
- 3 Tbsp3 Tbsp3 Tbsp Boiling Water
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 180°C. Line a large loaf tin (or two standard loaf tins).
- Place dates in a bowl, pour over boiling water. Leave for 10 minutes.
- Mash the date mixture slightly with a fork.
- Whisk eggs, yoghurt, maple syrup, and vanilla together.
- Add the date mixture and stir to combine.
- Fold in flour, cinnamon, and salt until just combined.
- Pour into prepared tin and bake for 45-55 mins.
- Mix glaze ingredients together, poke holes with a skewer all over the loaf and brush syrup generously over the hot loaf as soon as it comes out of the oven.
- Allow to cool before slicing.
