Strawberry Cupcakes with Coconut Butter Frosting
Yes, REAL strawberry cupcakes, made with juice from strawberries and freeze dried strawberry powder. Topped with a low sugar coconut butter frosting! Just sweet enough, without the cupfuls of powdered sugar!
Ingredients
Strawberry Cupakes
- 2 cups2 cups2 cups Frozen Strawberries
- 3 Tbsp3 Tbsp3 Tbsp Water
- 122 grams122 grams122 grams Cassava Flour
- 15 grams15 grams15 grams Arrowroot Flour
- .25 cup.25 cup.25 cup Freeze Dried Strawberries, powder
- 2 tsp2 tsp2 tsp Baking Powder
- .5 tsp.5 tsp.5 tsp Sea Salt
- 2 whole2 whole2 whole Egg Whites
- .75 cup.75 cup.75 cup Cane Sugar, organic
- 5 Tbsp5 Tbsp5 Tbsp Salted Butter
- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract
- .5 tsp.5 tsp.5 tsp Almond Extract
- .25 cup.25 cup.25 cup Milk
Coconut Butter Frosting
- 1 cup1 cup1 cup Organic Coconut Butter
- .25 cup.25 cup.25 cup Honey
- 4 Tbsp4 Tbsp4 Tbsp Milk

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Make Chocolate Lettering
- Melt chocolate and snip a small hole in a bag or pipe with a tiny tool
- Place melted chocolate in bag and pipe in "love" "xoxo" or heart outline on wax or parchment paper
- Place in the freezer until ready to use
- 2. Make Strawberry Puree
- Process slightly thawed frozen 🍓and water together until smooth
- Place in stovetop and allow to reduce for 10-15 minutes
- Place that mixture in the fridge until no longer hot
- 3. Make cupcakes
- -Whisk dry ingredients together in 1 bowl
- -Beat egg whites, and add in 1/4 cup sugar beating until foamy in a 2nd bowl
- -In a 3rd bowl beat butter until smooth, then add remaining 1/2 cup sugar and beat
- -slowly add in strawberry purée and dry ingredients into the butter bowl, beating continuously
- -add in extracts and milk, and mix
- -add in egg white mixture and beat until smooth
- -pour into 9 cupcake liners and bake at 350 for 17-18 minutes
- -cool completely
- 4. Make frosting
- Process all ingredients until smooth. Place in piping bag
- Frost your cupcakes, decorate with natural sprinkles, peel your chocolate lettering off your wax paper, and enjoy!
Notes
Can keep this dairy free by using Vegan butter and a dairy free full fat milk
