Sugar Cookie Protein Fudge
Protein-packed, no-bake, and absolutely magical. Think soft, sweet sugar cookie flavor but in fudge form… with rainbow sprinkles in every bite!
Ingredients
- 15 oz15 oz15 oz Coconut Manna (Coconut Butter), softened

- .5 cup.5 cup.5 cup Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted

- 1 tsp1 tsp1 tsp Vanilla Extract

- 0.5 tsp0.5 tsp0.5 tsp Almond Extract

- 1 cup1 cup1 cup Vanilla Protein Powder
- 0.333 cup0.333 cup0.333 cup Rainbow Sprinkles, plus extra for topping

- 0.125 tsp0.125 tsp0.125 tsp Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a 9x9 pan with parchment paper & set aside.
- If your coconut butter is solid, transfer to a microwave safe bowl & heat at 20 second intervals until smooth and pourable; mixing well between each interval.
- In a large bowl, whisk together softened coconut butter, melted butter, maple syrup, vanilla extract, and almond extract. This will start to become thick and sticky.
- Stir in protein powder & sea salt until a thick, dough-like mixture forms; mixing with a wooden spoon or hands if needed.
- Fold in rainbow sprinkles.
- Press mixture evenly into the pan. Smooth the top, then sprinkle extra rainbow sprinkles on top and lightly press them in.
- Freeze for about 50 minutes, or until firm enough to slice.
- Cut into small squares. Store in the fridge for up to 2 weeks or freeze for longer!
