No Bake ‘Cosmic Brownies’

These homemade Cosmic Brownies are chewy, rich, and topped with candy-coated chips—except this version is no-bake, naturally sweetened, and secretly packed with fiber!
Ingredients
- 1 cup1 cup1 cup Creamy Peanut Butter
- 1.5 cups1.5 cups1.5 cups Cocoa Powder, unsweetened, divided
- 0.75 cup0.75 cup0.75 cup Pure Maple Syrup, divided
- 0.25 cup0.25 cup0.25 cup Almond Milk, + 1tsp or more to desired consistency
- 2 Tbsp2 Tbsp2 Tbsp Rainbow Candy Coated Chocolate Chips

- In a mixing bowl, stir together 1 cup peanut butter, ½ cup maple syrup, and ⅔ cup unsweetened cocoa powder until smooth and thick.
- Press the mixture firmly into a parchment-lined 8x8 dish and freeze while you prepare the ganache.
- In a clean bowl, whisk together ½ cup unsweetened cocoa powder, ¼ cup maple syrup, and ¼ cup + 1 tsp unsweetened almond milk until a thick, glossy frosting forms. Add a splash more almond milk if needed.
- Spread the ganache over the frozen base in an even layer.
- Sprinkle generously with candy-coated chocolate chips.
- Freeze for 30 minutes or until firm enough to slice.
- Slice into 9 squares and enjoy!
