Sunbutter Flourless Chocolate Chip Cookies
These cookies have minimal ingredients and are delicious. They are paleo, nut-free, and gluten-free.
Ingredients
- 1 cup1 cup1 cup Sunbutter
- .667 cup.667 cup.667 cup Coconut Sugar
- 1 whole1 whole1 whole Egg
- 2 tsp2 tsp2 tsp Vanilla Extract
- 1 tsp1 tsp1 tsp Baking Soda
- .5 cup.5 cup.5 cup Semi-Sweet Chocolate Chips, Enjoy Life brand
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- In a medium mixing bowl, or in the bowl of the stand mixer add the sunflower seed butter, coconut sugar, egg, vanilla extract, and baking soda. Using a hand mixer or stand mixer, cream the mixture until it's fully combined.
- Stir in the chocolate chips.
- Using a spring loaded cookie scoop, form two balls and then roll them together with your hands to form a large dough ball. Place the dough ball on the sheet pan and continue the process until all the dough is used.
- Place the sheet pan in the oven and bake for 8-10 minutes. The cookies should still appear gooey when they are done. Do not overbake or the cookies will be dry.
- Remove from the oven and leave the cookies on the sheet pan to fully cool before eating.
