Thai Inspired Chicken Salad
This salad has so much flavor and is delicious. It's Whole30 and Paleo compatible and makes a fun summer meal.

- 1 whole1 whole1 whole Onion, green, thinly sliced
- 1-10 oz1-10 oz1-10 oz Mandarin Orange Segments, can (packed in juice, not syrup)
- .25 cup.25 cup.25 cup Cilantro, leaves
- 1 whole1 whole1 whole Red Bell Pepper, .25 inch thick slices
- .5 cup.5 cup.5 cup Carrots, shredded
- 2 oz2 oz2 oz Alfalfa Sprouts
- 2 whole2 whole2 whole Chicken Breast, (about 1 lb.)
- .5 tsp.5 tsp.5 tsp Sea Salt
- .25 tsp.25 tsp.25 tsp Black Pepper

- 1 clove1 clove1 clove Garlic, clove, minced
- .25 tsp.25 tsp.25 tsp ground Ginger
- 2 Tbsp2 Tbsp2 Tbsp Cilantro, leaves
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- .25 cup.25 cup.25 cup Almond Butter, creamy (no salt, the only ingredient is almonds)
- 2 whole2 whole2 whole Medjool Dates, pitted, soaked in hot water for 15 minutes
- 1 tsp1 tsp1 tsp Red Curry Paste
- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil
- 2 Tbsp2 Tbsp2 Tbsp Rice Vinegar
- 1 tsp1 tsp1 tsp Sesame Oil
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- .25 tsp.25 tsp.25 tsp Sea Salt
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Hot Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sprinkle 1/2 teaspoon of sea salt and 1/4 teaspoon of pepper on both sides of the chicken breasts and grill the chicken until fully cooked and no longer pink.
- Place all the salad dressing ingredients into a high-speed blender or jar wide enough to fit an immersion blender.
- Blend everything until it's fully combined.
- In a large bowl, toss the salad greens, green onion, mandarin oranges, 1/4 cup of cilantro, bell pepper, and shredded carrots. Make sure everything is thoroughly combined and divide between two bowls.
- Top each salad with almonds, alfalfa sprouts, and sliced chicken breast. Drizzle the dressing over the salads and serve with additional dressing on the side.
