Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

pancake buns

  1. first make a batch of my protein pancakes into little buns (I make ~12 for each large serving).

whipped cowboy schmear

  1. add all ingredients to a food processor; blend until smooth & creamy.

mini chicken & waffle cone meatballs

  1. preheat oven to 400.
  2. first add waffle cone granola to a food processor & blitz a few times into a finer crumble.
  3. to a bowl, add granola & remaining meatball ingredients.
  4. using a small cookie scoop, make mini meatballs (~48).
  5. slightly smash meatballs to make more of a patty.
  6. place meatballs on a lined baking dish, then bake for 12-15 minutes.

egg bites

  1. lower oven to 350.
  2. in a blender, blend eggs, cottage cheese, salt, & pepper.
  3. pour ~1 T into 2, 24 divot silicon mini muffin tins.
  4. add a small square of cheese onto each egg bite, then bake for 15-18 minutes or until eggs are set.

  1. to a mini pancake bun, add whipped cowboy schmear → mini chicken & waffle cone meatball → bacon → cheesy egg bite + extra slice of cheese → another mini pancake bun (option to secure with a toothpick).
  2. serve with a side of mixed berry compote for dipping!
