The Yummiest Homemade Granola Bars
The ultimate granola bar recipe that tastes delicious and doesn't crumble into a million pieces the minute you bite into them!:)
Ingredients
- 2 cups2 cups2 cups Gluten-Free Rolled Oats
- 0.666 cups0.666 cups0.666 cups Coconut Flakes, Unsweetened
- 0.333 cup0.333 cup0.333 cup Chia Seeds

- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder, (my favorite is French Vanilla by Just Ingredients)
- 1 cup1 cup1 cup Organic Pitted Medjool Dates - Thrive Market, chopped into tiny pieces by hand or ground up in a food processor

- 1.5 cups1.5 cups1.5 cups Creamy Peanut Butter, All natural, 100% peanuts

- 0.25 cup0.25 cup0.25 cup Honey, raw

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup

- 0.75 cup0.75 cup0.75 cup Mini Chocolate Chips, Semi-Sweet

- 0.333 cup0.333 cup0.333 cup Macadamia Nuts, Raw, with salt (crushed or chopped small)
- 0.25 cup0.25 cup0.25 cup Butter, Salted, melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop and prep macadamia nuts and dates if you haven't already!
- Mix all ingredients in a stand mixer, or by hand until everything is well incorporated.
- Pour mixture onto a lined baking sheet and press down firmly to create a nice 1/4-1/2 inch thick layer. Press firmly to make sure everything is sticking together nicely.
- Freeze on a baking sheet for 10 minutes.
- Then remove from the freezer and cut your granola bars into small rectangles at whatever size you prefer. I keep mine a bout 1 inch by 3-4 inches.
- From here you have a few options. I love to dehydrate mine with my Benchfoods dehydrator, which I will set to 135ºF for 2 hours. IF you do not have a dehydrator no problem! They will be slightly softer, but you can store on the counter or store in the fridge(I prefer this method if you don't dehydrate). See Notes for using the oven.**
- If you are dehydrating, make sure to let them cool completely before packing them.
- I like to wrap each bar individually or store in layers for parchment paper to keep them from sticking to one another(especially if you aren't dehydrating them!)
- Make sure to store in an airtight container. They will be nice and fresh for up to a week on the counter and 2 weeks in the fridge!
Notes
If you would like to try to dehydrate with your oven--it is possible. Most ovens won't go below 170ºF, so you will have to prop your one door open slightly to get the closest results and you may have to bump up the time form 2 hours to 3 hours or so. Allow your granola bars to cool completely before removing them from your baking sheet. Wrap them and store in an air tight container. Enjoy!
