Tofu & Beet “Caprese” Salad
Who says caprese needs mozzarella? Marinated tofu brings the protein, sweet roasted beets add earthy flavor, and juicy tomatoes + fresh basil keep it bright and summery. This take on a caprese is a lil taste of summer but without the dairy!

Ingredients
Tofu
- 1 whole1 whole1 whole Tofu, extra-firm tofu, pressed and cubed
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 pinch1 pinch1 pinch Salt and Pepper
Salad
- 2 whole2 whole2 whole Beets, Pre-Cooked
- 1 whole1 whole1 whole Tomato, Heirloom, sliced
- 1 cup1 cup1 cup Baby Spinach
- 1 tsp1 tsp1 tsp Sea Salt

- 1 pinch1 pinch1 pinch Black Pepper

- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Organic Balsamic Glaze

- Drain and press tofu to remove excess water
- Slice into thin slices
- Place in a container and add apple cider vinegar, garlic, salt and pepper to the tofu to marinate for 20-30 min.
- Arrange beets, tomatoes, spinach, and tofu on a platter.
- Drizzle generously with olive oil and balsamic glaze
- Finish with flaky sea salt, cracked pepper, and salt
- Optional toppings:
- Toasted pistachios
- Hemp hearts
- Microgreens
- Lemon zest
