Who says caprese needs mozzarella? Marinated tofu brings the protein, sweet roasted beets add earthy flavor, and juicy tomatoes + fresh basil keep it bright and summery. This take on a caprese is a lil taste of summer but without the dairy!

Process

  1. Drain and press tofu to remove excess water
  2. Slice into thin slices
  3. Place in a container and add apple cider vinegar, garlic, salt and pepper to the tofu to marinate for 20-30 min.
  4. Arrange beets, tomatoes, spinach, and tofu on a platter.
  5. Drizzle generously with olive oil and balsamic glaze
  6. Finish with flaky sea salt, cracked pepper, and salt
