Tuna Melt Quesadilla
My twist on the classic tuna-melt with this quick & easy quesadilla! Perfect for a quick lunch or protein packed dinner. Feel free to customize it with your favorite tuna salad ingredients & toppings. Provecho amigos!
Ingredients
Tuna Salad
- 4 whole4 whole4 whole Canned Tuna, washed and drained
- 0.25 cup0.25 cup0.25 cup Onion, finely diced
- 0.25 cup0.25 cup0.25 cup fresh Dill, chopped
- 0.25 cup0.25 cup0.25 cup Sir Kensington's Classic Mayonnaise
- 2 Tbsp2 Tbsp2 Tbsp Yellow Mustard
- 2 - 3 whole2 - 3 whole2 - 3 whole Hard Boiled Egg, OPTIONAL
- 1 pinch1 pinch1 pinch Salt
- 1 pinch1 pinch1 pinch Black Pepper
- 1.5 tsp1.5 tsp1.5 tsp Everything but the Elote Seasoning - Trader Joe's, OPTIONAL
- 5 - 6 whole5 - 6 whole5 - 6 whole Pickles, OPTIONAL Topping: I use Bread & butter pickles
Quesadilla
- 6 whole6 whole6 whole Cassava Flour Tortillas - Siete Foods, Any tortilla of your choice will work!
- 0.333 cup0.333 cup0.333 cup Mexican Cheese Blend, Mozzarella, pepper jack, and cheddar work great as well!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. In a mixing bowl, combine the tuna, diced onion, chopped dill, mayo, mustard, salt, pepper, and optional elote seasoning. Mix well until all ingredients are evenly incorporated.
- 2. Heat a non-stick skillet over medium heat.
- 3.Place a grain-free tortilla in the skillet and sprinkle some cheese over half of it. Cook for 2-3 minutes on each side, or until the tortilla is crispy and golden brown, and the cheese is melted.
- 4.Remove from heat. Carefully open quesadilla.
- 5.Spread a generous amount of the tuna mixture over the melted cheese. Add any additional toppings such as pickles.
- 6.Fold the tortilla over the filling to create a half-moon shape.
- 8.Serve hot, provecho!
