Turkey Meatballs + Gravy
These are a family favorite. I love to make them in bulk to share for meal trains or just for fun! With a cookie scoop, it's super fast as well!
Ingredients
Meatballs
- 3 lb3 lb3 lb Ground Turkey

- 0.666 cup0.666 cup0.666 cup Almond Flour

- 5 whole5 whole5 whole Eggs
- 3 Tbsp3 Tbsp3 Tbsp Avocado Oil
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Coconut Aminos
- 0.75 Tbsp0.75 Tbsp0.75 Tbsp Garlic Powder

- 0.75 Tbsp0.75 Tbsp0.75 Tbsp Onion Powder

- 2.5 Tbsp2.5 Tbsp2.5 Tbsp Poultry Seasoning - Primal Palate

- 0.75 tsp0.75 tsp0.75 tsp Sea Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Gravy
- 1 quart1 quart1 quart Bone Broth, Turkey or Chicken

- 6 Tbsp6 Tbsp6 Tbsp Butter, Salted

- 3 Tbsp3 Tbsp3 Tbsp Tapioca Starch

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Thyme, Dried

- 0.5 tsp0.5 tsp0.5 tsp Poultry Seasoning - Primal Palate

- 0.5 tsp0.5 tsp0.5 tsp Sea Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 375F
- Mix all meatball ingredients together until combined
- Line a baking sheet with parchment paper
- Use a cookie scoop to portion meatballs onto the sheet (about 1-1/2 inches diameter)
- Place the meatballs on the sheet, they can be touching
- Bake at 375°F until cooked through
- Broil until the tops are nicely browned
- While meatballs cook, add all ingredients for the gravy to a sauce pan excluding the tapioca starch and about 1/2 cup of the broth
- In a small bowl, mix the tapioca starch with a little cold liquid from the gravy to make a slurry
- Heat the gravy until simmering on medium heat
- Slowly whisk the slurry into the simmering gravy
- Continue cooking, stirring constantly, until the gravy thickens to your desired consistency
- Remove from heat and adjust seasoning if needed
- Serve over your favorite mashed potatoes and with green beans or asparagus
Notes
Mix the meatballs in the morning and leave in fridge until you're ready to shape and cook to better impart flavor!
