Watermelon Mint Lassi (Edit recipe)

Who's ready for a new lassi in town?? You are in for a refreshing treat! Watermelon is my favorite fruit and I eat copious amounts of it every summer! It brings me so much joy. While making watermelon popsicles, I ended up experimenting with this watermelon lassi! It's so light,  refreshing and summery. It will cool you down on a hot summer day! The mint is a perfect accomplice to the watermelon. Can't wait for you all to make this watermelon mint lassi!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Chop watermelon into cubes
  2. Add all the ingredients to a blender and blend well
  3. Serve over ice and garnish with mint leaves
  4. You can also add a slice of watermelon to the glass to make it fancy!

Notes

To make this lassi dairy free and whole30 compatible, use nut based yogurt and omit the honey
