Roasted Red Pepper Feta Cottage Cheese Dressing – High Protein, Low Carb
Roasted red pepper feta cottage cheese dressing is a creamy, pourable dressing blended from cottage cheese, feta cheese, jarred roasted red peppers, and a spoon of sun-dried tomato. It tastes like sweet roasted pepper and salty feta with a smoky paprika edge underneath, and it takes 5 minutes in a blender with no cooking. I make a jar most weeks in summer, because a plain grilled chicken breast and a handful of cucumber turns into an actual high protein low carb lunch the second this goes over it.

- Add the cottage cheese, feta, roasted red peppers, sun-dried tomatoes, lemon juice, garlic powder, sweet paprika, oregano, smoked paprika, and black pepper to a single-serve blender cup.
- Blend until completely smooth and light, about 1 to 2 minutes. It should look almost whipped. Stop and scrape down the sides once so the feta does not hide in a corner.
- Check the texture. If you want it pourable rather than spoonable, add the water half a tablespoon at a time and blend again briefly until it is the consistency you like.
- Taste. Add a pinch more salt only if your feta was mild. Spoon into a small jar or straight over your salad.
Notes
- Store in a sealed jar in the fridge for up to 5 days. It firms up cold, so stir before using or loosen with a splash of water.
- Do not freeze. Cottage cheese turns grainy after thawing.
- If a pitcher blender is all you have, blend the whole tub of cottage cheese smooth first and measure out of that.
- Serve with: Greek chicken salad
