Whipped Ricotta on Toast
Delicious and refreshing toast with creamy whipped ricotta, and it's even better with air fryer roasted tomatoes! The flavors are just so wonderful together, and it makes a perfect snack or breakfast.
Ingredients
- 16 oz16 oz16 oz Ricotta
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 0.5 tsp0.5 tsp0.5 tsp Sea Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Parsley
- 1 Tbsp1 Tbsp1 Tbsp Lemon zest, approx from 1 lemon
- 1 - 4 pieces1 - 4 pieces1 - 4 pieces Sourdough Bread, or any bread of your choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place ricotta, olive oil, sea salt, black pepper, parsley, and lemon zest in a food processor and process until ultra creamy. If you don't have a food processor, you can beat vigorously with a whisk. Place in the fridge.
- Make the 10-minute Air Fryer Roasted Tomatoes.
- Toast bread to your liking.
- Spread toast with whipped ricotta, then top with roasted tomatoes. If you like, you can top with herbs, flaky sea salt, honey, and/or balsamic vinegar or glaze.
Notes
You'll have leftover whipped ricotta after making this recipe. You can enjoy it as a dip and serve with crackers and fresh vegetables.
