Zucchini Boats
Zucchini Boats are a delightful and healthy dish that transforms fresh zucchini into a flavorful, nutrient-packed meal. Each zucchini is halved and hollowed to create a "boat," then filled with a savory mixture of ingredients. Ingredients
- 222 Zucchini
- 6 tsp6 tsp6 tsp Olive Oil
- 1 tsp1 tsp1 tsp Black Pepper
- 1 lb1 lb1 lb Ground Beef
- 1 tsp1 tsp1 tsp Kosher Salt
- 0.50.50.5 Basil Sauce – Yo Mama’s Foods
- 0.25 cup0.25 cup0.25 cup Mozzarella Cheese, Shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Slice Zucchinis in half lengthwise and scoop out the seeds
- Brush each zucchini slice with 1 tsp olive oil and season with ½ tsp black pepper
- Bake at 350F for 10 minutes
- While the zucchinis bake, In a medium pan on medium heat, add 2 tsp olive oil and 1lb ground beef
- Season with salt and pepper and continue to stir until cooked
- Pour in ½ jar of Yo Mama’s Basil Marinara into the beef and stir until it’s evenly coated
- Let simmer for 2 mins
- Once the zucchinis are out of the oven, top each with 3 heaping tbsp of ground beef
- Sprinkle mozzarella cheese on top of each zucchini
- Bake at 350F for an additional 10 minutes
- Remove from the oven and let cool for 5 minutes
- Enjoy!
