Lamb Meatballs
- 1 lb1 lb1 lb Ground Lamb - US Wellness Meats

- 0.333 cup0.333 cup0.333 cup Panko Bread Crumbs
- 1 Tbsp1 Tbsp1 Tbsp Shallot, minced
- 1 clove1 clove1 clove Garlic, minced

- 1 Tbsp1 Tbsp1 Tbsp Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Parsley, chopped

- 1 whole1 whole1 whole Egg
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Add the ground lamb, panko, shallot, garlic, yogurt, egg and parsley to a large bowl. Gently mix until everything is combined. Don't overwork the lamb.
- Roll the mixture into small cocktail-size meatballs and arrange them on the prepared baking sheet.
- Bake for about 25 minutes, or until the meatballs are cooked through and reach an internal temperature of 160°F.
- While the meatballs bake, add the cranberry sauce, BBQ sauce, honey mustard, brown sugar and bourbon, if using, to a large saucepan. Cook over medium-low heat, stirring occasionally, until everything is melted together and the sauce is smooth and warmed through.
- Add the cooked lamb meatballs directly to the saucepan and gently toss until they're completely coated in that cranberry BBQ sauce.
- Keep warm over low heat until you're ready to serve. Transfer to a serving dish, add cocktail picks and watch them disappear.
