Summer Spaghetti with Meatballs and Zucchini
Great way to use tomatoes from your garden to make a sweet, light summer sauce. Add in meatballs and zucchini and it is a great summer meal.
Ingredients
- 3 whole3 whole3 whole fresh whole tomatoes, tops slice off
- 2 whole2 whole2 whole Green Onion (Scallion), sliced on the angle in 1 inch pieces

- 0.5 cup0.5 cup0.5 cup Vegetable Broth
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 2 cloves2 cloves2 cloves Garlic, Diced

- 1 Tbsp1 Tbsp1 Tbsp Tomato Paste

- .5 cup.5 cup.5 cup Marinara Sauce
- 2 whole2 whole2 whole Zucchini, sliced very thin
- 12 - 15 whole12 - 15 whole12 - 15 whole Frozen Meatballs
- 8 fl oz8 fl oz8 fl oz Spaghetti
- 1 cup1 cup1 cup Pasta Water
- 0.5 cup0.5 cup0.5 cup Parmesan Cheese, grated

- 1 Tbsp1 Tbsp1 Tbsp Basil, Fresh, chopped

- 0.25 cup0.25 cup0.25 cup White Wine

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sauce:
- -cut tops off 3-4 tomatoes
- -place in sauce pan cut side down in olive oil , veg broth , 2 diced green onions , garlic and fresh basil chopped
- -simmer covered until skin on tomatoes can be pulled off with tongs
- -mash tomatoes
- -add tomato paste , white wine
- -simmer until sauce thickens
- -slice two zucchini very thin and add to pan
- -add frozen meatballs
- -cover simmer for 20 mins or so until meatballs are cooked thru
- -cook pasta-add 1/2 cup pasta water to sauce
- -mix pasta and sauce -top with Parmesan and fresh basil
