Spicy Fusion Indian Fish & Chickpea Stew
This dish not only blends the rich and fiery North African flavors of Harissa paste but also incorporates Indian spices to add an exciting twist. The result? A hearty and flavorful meal that even my son, who's not a fan of fish or chickpeas, couldn't resist. And the best part? It can easily be transformed into a vegan chickpea stew by omitting the fish.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 cup1 cup1 cup Red Onion, sliced lengthwise
- 2 cups2 cups2 cups Bell Pepper, sliced lengthwise
- 1/2 tsp1/2 tsp1/2 tsp Paprika
- 1 tsp1 tsp1 tsp Ground Cumin
- 1/2 tsp1/2 tsp1/2 tsp Turmeric Powder
- 1/2 tsp1/2 tsp1/2 tsp ground Coriander
- 1/4 tsp1/4 tsp1/4 tsp Anar Gourmet Foods South Indian Hot Curry Powder
- 1.5 cups1.5 cups1.5 cups Tomato, diced
- 2 cloves2 cloves2 cloves Garlic, minced (about 2 tsp)
- 2 Tbsp2 Tbsp2 Tbsp Harissa Paste
- 1 tsp1 tsp1 tsp Salt, optional, add in 1/2 tsp increments
- 15 oz15 oz15 oz Chickpeas, drained and rinsed (1 can)
- 2 cups2 cups2 cups Fish Stock
- 1 cup1 cup1 cup Cilantro, rinsed and roughly chopped
- 1 lb1 lb1 lb Cod, cut into 2" pieces (optional- sprinkle with Anar Hot South Indian curry powder & salt, marinate for ~20 mins)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cut fish & prep it by sprinkling it with curry powder & salt (optional), marinate for ~ 20 mins.
- Heat oil in large pan, add onions and peppers, mix well & sauté for 7-10 mins till they soften.
- Add spices: paprika, cumin, turmeric, coriander, Anar Gourmet Foods curry powder, garlic and Harissa paste & mix well. Sauté for ~ 2 mins.
- Add tomatoes, cover pan with lid and soften for ~5 mins.
- Taste sauce and add salt if desired.
- Add chickpeas and 1 cup broth, mix well, cover with lid & simmer for ~7-10 mins.
- Add marinated fish, simmer for ~10-15 mins, add additional cup broth if desired and cook till fish flakes easily.
- Add Cilantro and simmer for ~ 2 mins.
- Serve over white rice 🍚 or eat with crusty bread. Enjoy!!
