Strawberry Avocado Salad with Lemon Poppy Seed Dressing
This is a bright and delicious salad that is easy to put together. It's perfect for summer and Paleo compatible.
Ingredients

- 1 whole1 whole1 whole Lemon, juiced
- 2 Tbsp2 Tbsp2 Tbsp Honey
- .5 tsp.5 tsp.5 tsp Sea Salt
- .75 tsp.75 tsp.75 tsp Poppy Seeds
- 1 clove1 clove1 clove Garlic, minced
- 5 oz5 oz5 oz Spring Mix Salad Greens Lettuce, or mixed greens of choice
- .25 cup.25 cup.25 cup Red Onion, thinly sliced
- 8 whole8 whole8 whole Strawberries, quartered
- 1 whole1 whole1 whole Avocado, sliced
- 2 Tbsp2 Tbsp2 Tbsp Sunflower Seeds
- 2 oz2 oz2 oz Goat Cheese

- Using a high-speed or immersion blender, blend the avocado oil, lemon juice, honey, sea salt, and garlic until it's fully combined.
- Stir in the poppy seeds and set the dressing aside.
- In a medium bowl, toss the mixed greens, onion, and strawberries together.
- Divide the salad between two large bowls and top with the avocado, sunflower seeds, and goat cheese.
