Grilled Greek Chicken Skewers with Tzatziki
We made these skewers on the 4th of July for a small gathering we had, and they were delicious! We thought we'd have leftovers, but nope! Soak the skewers for about an hour before grilling for best results!
Ingredients
- 1.5 lb1.5 lb1.5 lb Boneless Skinless Chicken Thigh, (about 6 thighs)
- 1/3 cup1/3 cup1/3 cup Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice, (juice of 1 lemon)
- 1 Tbsp1 Tbsp1 Tbsp Super Gyro Seasoning - Primal Palate
- 3 cups3 cups3 cups Zucchini, (2 zucchini, rough chopped)
- 111 Red Bell Pepper, chopped
- 111 Green Bell Peppers, chopped
- 1/2 whole1/2 whole1/2 whole Red Onion, chopped
- 1/2 whole1/2 whole1/2 whole Yellow Onion, chopped
- 2 cups2 cups2 cups White Mushrooms, stems removed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cut the chicken into 2" pieces. Place in a large bowl.
- Make the marinade: Whisk together the olive oil, lemon juice, and Primal Palate Super Gyro Seasoning. Pour over the chicken and toss to coat.
- Chop the veggies and add to the marinated chicken, toss to coat. Cover and refrigerate for 1-2 hours.
- While the chicken and veggies are marinating, soak 12-15 bamboo skewers.
- Make the tzatziki sauce.
- Assemble the skewers, alternating veggies and chicken until everything is used up and evenly distributed among the skewers.
- Preheat your grill, allowing for a hot zone and a cool zone.
- Place the skewers over the hot zone, with the handle end of the skewer near the cool zone. This will encourage the food to cook without burning or charring the skewer.
- Rotate skewers to cook evenly, for approximately 20 minutes, or until cooked.
- Serve with the tzatziki sauce, along with dolmas, lemon wedges, other side dishes of your choice..
Notes
Yields about 12-14 skewers (standard bamboo skewers).
