Huevos Rancheros (gluten-free)
This delicious breakfast comes together simply, just frying up some eggs with black beans over a tortilla, and topped with spicy salsa, avocado, and fresh cilantro. We added fresh sliced tomatoes and grated cheddar cheese on ours!
Ingredients
- Avocado Oil Spray
- 444 Eggs
- 1/41/41/4 Black Beans
- 1 pinch1 pinch1 pinch Himalayan Pink Salt
- 1 pinch1 pinch1 pinch Black Pepper
- 1/21/21/2 Avocado, sliced
- 1/2 cup1/2 cup1/2 cup Grape Tomatoes, sliced in half
- 2 Tbsp2 Tbsp2 Tbsp Salsa
- 3 Tbsp3 Tbsp3 Tbsp Cilantro, chopped
- 2 Tbsp2 Tbsp2 Tbsp Sharp Cheddar Cheese, or other cheese of choice
- 222 Cassava Flour Tortillas - Siete Foods, Any of the Siete tortillas will work.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat a skillet over medium heat. Once preheated, spray with avocado oil and fry the eggs over medium to medium low heat. Add the black beans directly into the skilled. Season with salt and pepper.
- While the eggs and black beans are cooking, slice the avocado and tomatoes. Chop the cilantro.
- Lightly toast the siete tortillas over an open flame or in a skillet.
- Plate the dish by topping each tortilla with two eggs, black beans, sliced avocado, sliced tomato, chopped cilantro. Add a spoonful of salsa, and sprinkle with grated cheese. Serve immediately.
