caramelised apple French toast, the ultimate cosy breakfast treat! golden, cinnamon-spiced apples over fluffy toast, all with that perfect autumn flavour in every bite. It's warming, sweet and even better, plant-based & refined sugar free!
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Unsalted Butter, plant-based
- 6 - 8 pieces6 - 8 pieces6 - 8 pieces Sourdough Bread, thick cut
- 2 whole2 whole2 whole Banana, mashed
- 85 ml85 ml85 ml Soy Milk
- 1 tsp1 tsp1 tsp vanilla bean paste
- 2 Tbsp2 Tbsp2 Tbsp Coconut Sugar
- 0.5 tsp0.5 tsp0.5 tsp sweet cinnamon
- 1 whole1 whole1 whole organic Apple, peeled and chopped into chunks
- 2 Tbsp2 Tbsp2 Tbsp Water
- 2 Tbsp2 Tbsp2 Tbsp Coconut Sugar
- 0.5 tsp0.5 tsp0.5 tsp sweet cinnamon
- 1 pinch1 pinch1 pinch ground Nutmeg
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Peanut Butter, optional
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, optional
- 2 Tbsp2 Tbsp2 Tbsp Granola, optional
- 2 Tbsp2 Tbsp2 Tbsp Plain Cocojune Organic Coconut Yogurt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- add the chopped apple, water, 3 tbsp coconut sugar, 0.5 tsp sweet cinnamon & nutmeg into a pan, stir together so the apple is coated in the mix. Cook over a medium to low heat, for 10 minutes until the apple is soft & golden.
- add the mashed banana, soya milk, vanilla bean paste, 2 tbsp coconut sugar and 0.5 tsp of sweet cinnamon in a bowl and whisk together.
- Melt 2 tablespoons butter in a skillet over a medium heat. Dip one slice of bread in the mixture, then turn to coat the other side.Immediately lay it in the buttered skillet and cook until golden. Flip it over, then cook the other side.
- Repeat with the rest of the bread, (adding more butter to the pan if needed)
- serve with the caramelised apple & any other desired toppings.
