Lottie’s Calabrian Sausage, Lemon & Kale Rigatoni
This rigatoni pasta is the perfect blend of easy + indulgent, with spicy Calabrian chili sausage, fresh lemon, and a rich parmesan + olive oil sauce that’s big on flavor without the fuss. It’s a simple way to bring a gourmet twist to a weeknight din!

- 14 oz14 oz14 oz Rigatoni Pasta
- 1 clove1 clove1 clove Garlic, microplaned
- 1 whole1 whole1 whole Onion, diced
- 1 whole1 whole1 whole Fennel, diced
- 1 bunch1 bunch1 bunch Kale, cleaned and chopped
- 4 whole4 whole4 whole Lemon
- 1 whole1 whole1 whole Parmesan Cheese, grated
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook rigatoni according to package directions, reserving 1–2 cups of pasta water.
- In a medium pan, heat 1 tbsp olive oil over medium. Cook sausage, breaking it into chunks; set aside.
- In the same pan, sauté onion, fennel, and garlic until tender. Season with salt, then return sausage to pan.
- Add the zest of 1 lemon, 1 cup pasta water, juice of 1 lemon, and ⅓ cup parmesan. Reduce heat to low.
- Add pasta and kale, tossing until well-coated. Adjust sauce with additional pasta water, lemon juice, and parmesan as needed.
- Top with black pepper and extra parmesan before serving.
